Combine 50 pounds Dawn Exceptional® R&H® Richcreme® Vanilla Cake Base, 17.5 pounds Whole Eggs, 5oz Cinnamon, 2oz Cloves, and 2oz Nutmeg in a stand mixer fitted with a paddle attachment and mix for one minute on low speed, then three minutes on medium speed (third speed on a four speed mixer). Add 15 pounds Vegetable Oil, 6 pounds Applesauce, 8 pounds Butterscotch Chips, and 8 pounds Water. Scrape the bowl and mix for three minutes at second speed. Using a #16 blue scoop, scoop batter into lined muffin pans and top with streusel. Bake in a rack oven at 360F for 20 minutes or until muffins spring back lightly when touched.
