In a bowl on a stand mixer fitted with the paddle attachment, place 5 pounds crème cake base, 1 pound 4oz soft butter, 10oz whole eggs, 5oz corn syrup, and 2 pounds 8oz chocolate chips in bowl and mix on 1st speed until a cookie dough forms, 30 seconds- 1 minute. Scoop cookie dough into sheet trays. Bake at 360F until cookies are set.
