For the Brownie Batter:
Prepare brownie mix according to manufacturer's instructions. Using a freezer safe disc mold (each cavity should be 1 oz..), pour batter into mold and freeze overnight
For the Batter:
In the bowl of a mixer fitted with the paddle attachement, combine 100% pancake mix and 50% club soda or sparkling water. Mix on first speed until no lumps remain, scraping down the bowl as needed. Using a heavily floured bench, roll the dough to ¼-inch thick. Using a circle cutter that is slightly larger than the disc mold used, cut out circles, two circles for each disc. Gently brush half the dough circles with water, then place frozen discs on the dough circles that have been brushed with water. Place another dough circle on top and pinch the edges to seal. Place prepared discs in the freezer.
When ready to serve, deep fry discs at 365°F until golden brown and serve hot.
