German Plum Bars

Working Method

​​​​​​In the bowl of a stand mixer fitted with the paddle attachement, mix 100% creme cake base, 22.5% whole eggs, 6.25% corn syrup, 25% brown sugar, .625% salt and .625% vanilla.  Mix on low speed for 1 minute, then on medium speed for 2 minutes.  Scrape bowl and add 13.75% softeded unsalted butter, 5% water and 15% dried chopped plums.  Mix on medium speed for 2 minutes.  Deposit 4 lb. 4 oz. of batter into a sprayed and paper lined half sheet pan. Top with sliced almonds and streusel topping.  Bake at 350°F for 30 minutes or until bars are baked all the way through.
