In the bowl of a stand mixer fitted with the paddle attachment, cream together 20% shortening, 15% molasses, and 10% brown sugar until no lumps remain. Slowly add in 15% whole eggs and mix until fully combined, scraping down the bowl often. Add 3.75% cinnamon, 100% creme cake base, 15% all purpose flour, and .938% baking powder and mix until dough forms, Scrape bowl, and mix for another 30 seconds. If dough is too stiff, add additional water little by little until desired consistency is reached. Roll dough to ¼-inch thickness, cut into pig shapes, place onto a papered sheet pan; egg wash, and bake at 350°F until golden brown.
To make egg wash, use a ratio of 2:1 whole eggs:water. For example, for every pound of eggs used, add 8 oz water. Mix together and add a pinch of salt if desired.
