In the bowl of a mixer fitted with a dough hook, combine 100% Bizcocho mix, 18%  bread flour, 15% whole eggs, 33% water, 2.25% yeast, 10% soft butter, 4.38% orange fruit bits, and .0625% cinnamon and mix for 1 minute on low speed. Finish mixing using medium speed until bottom and walls are clean. Scale 16 oz. of dough for the Pan de Muerto – 14 oz. for the main portion and 2 oz. for the bones. Form the 14 oz. of dough into a ball, and place on a pan. Use the remaining 2 oz. of dough to form the bones that will go on top. Proof the dough for 20 to 30 minutes, then bake at 350°F for 20-25 minutes.
