Working Method

Remove pie lid from freezer and let come to room temperature.  Fill shell with 2 pounds 8oz Dawn peach filling.  Place pie lid on top of prepared shell and trim the edges.  Whisk up eggs to make egg wash and brush on top of pie, sprinkle with sanding sugar.  Bake at 350F until pie top is golden brown.

Chef Tips

To make egg wash, use a ratio of 2:1 whole eggs:water.  For example, for every pound of eggs used, add 8oz water.  Mix together and add a pinch of salt if desired.
