Working Method

Prepare cookie base according to manufacturer’s instructions, mixing in 10% chopped peanuts.  Line sheet trays with parchment paper.  Use a #30 black scoop to scoop cookie dough, round, roll in sugar, place onto trays and make a cross hatch pattern using a fork.  Bake at 350ºF until set all the way through and golden brown around the edges.  Let cool completely.
