Working Method

In a stand mixer fitted with the paddle attachment, add 100% red velvet cake mix, 20% softened unsalted butter and 20% dark brown sugar to mixing bowl.  Mix for 30 seconds on low speed.  Scrape bowl.  Add 15% water while mixing for 1 minute on low speed.  Add 50% white chocolate chips while mixing for another 30 seconds on low speed.  Using a #30 black scoop, scoop 1.5 oz. cookies onto lined sheet trays.  Bake at 350ºF until cookies are crisp around the edges.  Let cool completely and depan.
