Snickerdoodle Blondies

What you'll need


Working Method

Mix together 8.33% ground cinnamon and 100% granulated sugar.  Reserve. 

In a stand mixer fitted with a paddle attachment, combine 100% creme cake base, 20% whole eggs, 8.75% corn syrup, 20% brown sugar, 0.625% kosher salt, and 0.625% vanilla.  Mix on low speed for 1 minute, then medium speed for 2 minutes.  Scrape bowl and add 13.75% softened butter, 5% water, 2.5% cinnamon and 10% white chocolate chips.  Mix on medium speed for 2 minutes.  Pour into sprayed and papered baking sheets.  Sprinkle each with 2.5% reserved cinnamon and sugar mixture, there will be extra cinnamon and sugar to use in other projects.  Bake at 350°F for 30 minutes or until blondies are baked all the way through.  Let cool completely and depan.
