Remove the strawberries from the refrigerator and wipe each with a dry towel to remove any debris. DO NOT WASH WITH WATER.
Melt white coating chocolate; for every pound of melted white coating chocolate, add in 5 oz melted shortening, then color with gel colors. If using either milk or dark coating chocolate, do not add shortening. Dip strawberries in prepared coating chocolate and place on a parchment covered sheet tray. Drizzle with melted coating chocolate that has been placed in a piping bag. Let dry.
